Going back to your original question, switching between the worlds or starting wont change a thing.

You may have to trade with your other vessels to take crew from them to be able to capture the ship. Start the battle with the AI using bombs (click the fleet thing on the right and select ammo type) then switch them to grapeshot, once the hull of the enemy ship you want to capture is damaged, to kill the crew then take over. Just get some military frigates (by going to big ports, just search around, youll find one) and load up on bombs and grapeshot. The open world contains ships from cutters to first rates that may be trading vessels or military. As for the open world, where you actually sail around instead of fast travelling, you will get attacked by everyone and everything without that letter.
